Cauliflower Pizza

I have wanted to try cauliflower pizza for a while and just haven't had the time to work at it. Thursday, I was off for New Year's Eve and I decided that would be a perfect occasion to start testing. I really liked the finished product and it was not difficult.

Cauliflower Pizza

1 Bag Frozen Steam in Bag Cauliflower - I used a frozen bag for ease

2 Eggs

1/4 Cup Grated Parmesan Cheese

1/2 Cup Shredded Mozzarella

1/4 Tsp. Garlic Powder

1/4 Tsp. Salt

1/4 Tsp. Oregano

Pinch of Red Pepper Flakes

Steam the cauliflower in the bag per bag instructions in the microwave. (You can also steam on stove or use fresh cauliflower and steam any way you choose). Let cauliflower cool for a few minutes, squeeze out any extra water with a paper towel. Use either a potato masher or food processor to mash steamed cauliflower. I used a food processor because I wanted a lump free crust. Add eggs, cheese, and spices with the cauliflower. Mix well and dump mixture onto a cookie sheet covered with parchment paper. With the back of a fork, press the mixture into a a round pizza shape. You can make the crust as thick or as thin as you would like. Place the crust in a 400 degree oven for 20 minutes (more for a thicker crust or if you want a crispier crust). Once crust has baked, remove and add sauce and toppings of your choice. Place back in oven for 10 minutes.
